Answer: The Black Wyoming is a smooth finish and a flatter finish ( not matte, just not shiny) the Black has a more textured & shinier finish ( again, not super shiny , but more so than the Wyoming). This question has been answered previously -

Answer: The insole does come out of these and another Doc Marten pair I purchased. I will be returning. I noticed that quality getting worse with this brand.
